Chef on Wheels Catering uses real hickory wood, we slowly cook our ribs and beef brisket for over 12 hours. This allows for great smoke taste with the meat falling off the bones.
Many misunderstand the redness in the meat after smoking to be uncooked. This is not true. The meat is very well cooked for over 12 hours. The process of smoking the meat creates the top 1/4" of the meat to turn pink. This is our smoking process.
